Lobster Butternut Squash Risotto(龍蝦南瓜燴飯)
Ingredients:
-8oz Lobster Knuckle and Claw Meat
-2ea 4oz Lobster Tails, cut in half
-2cups Arborio Rice, cooked to package specifications
-1ea Shallot, small diced
-8oz Butternut Squash, small diced and blanched
-8oz Butternut Squash Puree
-4oz White Wine
-8oz Parmesan Cheese, grated
-16oz Chicken Stock, more if needed
-2oz Olive Oil
-4pieces Fried Sage (Garnish)
材料:
-8盎司 龍蝦關(guān)節(jié)和鉗子肉
-2條 4盎司龍蝦尾,對(duì)半切開
-2杯 意大利米(沒有的話,用做壽司的短粒米也可以,米一定要是短粒的)
-1塊 紅蔥頭,切小塊
-8盎司 南瓜,切小塊,焯水
-8盎司 南瓜泥
-4盎司 白葡萄酒
-8盎司 帕瑪森芝士,磨碎
-16盎司 雞肉高湯
-2盎司 橄欖油
-4片 炸鼠尾草(作為配菜)

BUTTERNUT SQUASH PUREE(南瓜泥)
-1ea Butternut Squash, cut in half, seeds removed
-?# Butter, unsalted, room temp
-1C Heavy Cream, heated through
-? C Whole Milk
-TT Salt
Place squash face down on sheet tray and roast at 350 degrees until fork tender. Remove from oven and scoop out flesh. Place squash in blender and add heavy cream and milk to loosen to desired consistency. Season to taste with salt. Reserve for risotto.
材料:
-1個(gè) 南瓜,對(duì)半切開,去掉南瓜籽
-1/4條 室溫?zé)o鹽黃油
-1杯 淡奶油,煮熱(美國的重奶油的脂肪含量和國內(nèi)的淡奶油相近)
-半杯 全脂牛奶
-適量 鹽
步驟:
1、南瓜切面朝下放在烤盤上,350華氏度烤至變軟;
2、出爐,挖出南瓜肉;
3、將南瓜放入攪拌器,加入奶油和牛奶,打至需要的質(zhì)感;
4、用鹽調(diào)味;
5、放置備用。
