Grilled Double Bone-In Pork Chop(厚切連骨豬排)
Ingredients:
-4ea 14oz Double Bone-in Pork Chop
-8oz Cajun Wet Rub
-TT Salt and Pepper
材料:
-4塊 14盎司厚切連骨豬排
-8盎司 卡真醬(做法見(jiàn)下文)
-適量 鹽和黑胡椒
Preheat your grill and identify your “hot spots.” They will appear whiter than the other grill surface area. Season pork chops with salt and pepper and place on grill. Cook to desired temperature making sure to cook evenly on each side. With 2 minutes remaining, baste the chops with the wet rub evenly on each side. Waiting until the end of cooking will prevent the rub from burning and give a more front forward flavor. Allow pork chops to rest at least 5 minutes once removed from grill.
步驟:
1、預(yù)熱烤肉架,找到“熱點(diǎn)”,“熱點(diǎn)”看起來(lái)會(huì)比其他區(qū)域要白上一些;
2、用鹽和黑胡椒給豬排調(diào)味,上烤肉架;
3、烤至想要的熟度并確保兩面均勻;
4、火候差兩分鐘的時(shí)候,兩面刷上卡真醬,最后才刷是為了避免醬料燒焦,并給豬排一個(gè)前味;
5、離開(kāi)烤肉架后,最少醒肉5分鐘。
注:
1、視頻中使用的是烤肉鍋;
2、視頻中在烤肉鍋上烤完后又在烤箱里烤了10-12分鐘

CAJUN RUB(卡真醬)
-1T Paprika
-1T Black Pepper
-1T Cayenne
-1T Thyme
-1T Kosher Salt
-? T Onion Powder
-? T Garlic Powder
-2T Brown Sugar
-1T Honey
-1T Bourbon
-6oz Olive Oil
材料:
-1湯匙 紅椒粉
-1湯匙 黑胡椒
-1湯匙 卡宴辣椒粉
-1湯匙 百里香
-1湯匙 粗鹽
-1/2湯匙 洋蔥粉
-1/2湯匙 大蒜粉
-2湯匙 紅糖
-1湯匙 蜂蜜
-1湯匙 波本酒
-6盎司 橄欖油
In a bowl, combine and mix all the dry ingredients followed by the liquids. Add more oil if too thick.
步驟:
1、在一個(gè)大碗里,先混合所有干料,再加入液體;
2、如果太稠,加多一點(diǎn)油。

SWEET POTATO PUREE(甜薯泥)
-5# Large Yams, peeled, rough chopped
-1/4# Unsalted Butter
-8oz Heavy Cream
-1/4 cup Brown Sugar
-TT Kosher Salt
材料:
-5個(gè) 大號(hào)甜薯,削皮,切大塊
-1/4根 無(wú)鹽黃油
-8盎司 淡奶油(美國(guó)的Heavy cream和國(guó)內(nèi)的淡奶油脂肪含量相近)
-1/4杯 紅糖
-適量 粗鹽
Place yams in pot covered with water and boil until fork tender. Meanwhile, on medium low heat, allow combine cream and butter and allow to simmer. Strain water and place in mixing bowl. At medium speed whip potatoes until broken up and starting to smooth. Add brown sugar and make sure fully incorporated. Add butter cream mixture to loosen and reach desired texture (you may need more than indicated above depending on starch content of potato). Pass through china cap. Season with salt to taste.

1、用沸水煮甜薯,直至變軟;同時(shí),在中低火上混合奶油和黃油,煮至將要沸騰(simmer)的狀態(tài);
2、甜薯瀝水,用中速打爛至順滑;
3、加入紅糖,混合均勻;
4、加入奶油黃油混合物,稀釋至想要的質(zhì)地(你可能需要比食譜提到的份量更多的奶油和黃油,取決于土豆的淀粉含量);
5、過(guò)一下粗目濾網(wǎng)(china cap);
6、調(diào)味。

BRUSSEL SPROUTS(球芽甘藍(lán))
-10# Brussel Sprouts, cut in half and blanched
-6oz Bacon Lardons or thick cut slab Bacon
-6oz Apple Cider
-2T Butter, unsalted
-TT Salt and Pepper
材料:
-10個(gè) 球芽甘藍(lán),對(duì)半切開(kāi),焯水
-6盎司 培根丁或者將板狀培根切厚片
-6盎司 蘋(píng)果汁
-2湯匙 無(wú)鹽黃油
-適量 鹽和黑胡椒
In a large sauté pan over medium high flame, add bacon lardons or thick but bacon to dry pan. Allow fat to render. Place blanched Brussel sprouts (cut side down) into pan. Allow for a hard sear on the Brussel sprouts. Turn down heat and carefully deglaze with apple cider, allowing the liquid to reduce and coat Brussel sprouts. Season with salt and pepper.
步驟:
1、用中高火加熱一個(gè)大煎鍋,直接加入培根;
2、讓培根出油;
3、切面朝下放下球芽甘藍(lán),簡(jiǎn)稱(chēng)焦糖色;
4、調(diào)小火,用蘋(píng)果汁來(lái)刷鍋,收汁并讓液體裹上甘藍(lán);
5、用鹽和黑胡椒調(diào)味。
