I'll go with the Ming for their ability to take out the Mongols, their innovative and accomplishments in literature and exploration. I believe they were stronger than the Tang dynasty, despite popular opinion.

Hmm... probably the Tang dynasty. The beginnings of the dynasty are the most interesting for me, and the Tang was a new height for Chinese civilisation. From a biased point of view, it's also the dynasty that influenced the development of Japan.
