抹茶起源于中國(guó),六朝時(shí)已見蹤影,隋唐時(shí)日趨成熟。根據(jù)三國(guó)魏時(shí)張輯《廣雅》載:荊、巴間采茶作餅,調(diào)煮飲用茶時(shí),先要炙茶,爾后要"搗末置瓷器中",意為要把茶葉搗成細(xì)末后放在瓷器中煮。這種將茶搗成的"末",可以說是抹茶的早期蹤影。《茶經(jīng).五之煮》中記載,唐時(shí)煮茶飲用時(shí),先要炙(烤)茶,然后是碾茶、羅(篩)茶,隨后便是煮茶。碾茶,是將茶碾成"細(xì)米狀",即半粒米大小。而煮好的茶,根據(jù)陸羽《茶經(jīng)》記載,茶與湯是分離的,飲的是湯。由此可見,早在1200年前的唐代,中國(guó)已可見抹茶的蹤影。宋元時(shí)飲茶方法由唐時(shí)的煮茶進(jìn)入到點(diǎn)茶。點(diǎn)茶時(shí),要將餅茶磨成粉末,然后過羅(篩)取其粉,再入茶盞調(diào)成膏,最后就是"點(diǎn)茶",使盞中泛起"湯花"。由上可見,宋代碾茶用茶磨,茶葉呈"粉狀",這與現(xiàn)今人們所說的抹茶是相一致的。
