the start of specialty coffee industry

1. Red ripe cherries are picked by hand, each tree yields about 2 pounds of green coffee beans a year, from roughly 9 pounds of fruit.
2. The fruit is thrown into a depulping machine, that separates the beans from the fruit. The fruit is depulped by a spinning-bladed shaft.
3. The beans released by this process get washed in a channel or gutter of rushing water. Unripe beans float to the surface, while the heavier mature ones sink to the bottom.
4. The mature beans end up in a tank, where soak over night to remove the gooey outer layer called honey and begin the fermentation process.
5. Finally the coffee beans are dried and raked on large flat bed.
6. Roasting transformed the green coffee beans into the aromatic brown beans that we purchase.
