The Earth is a blue planet with over 71% of its surface covered by vast bodies of water that harbor more than 80% of the world's biological resources. Global population growth and dwindling land resources pose challenges to food security. Blue foods, also known as aquatic foods, are the farmed or captured from freshwater or marine environments, including animals, plants, and algae. They contain abundant high-quality protein with unique structure and function, which are promising to serve as a sustainable source for human consumption. Therefore, exploring proteins from blue foods to meet the demand in the food sector is of great significance.?
