Scallop Appetizer(扇貝前菜)
Ingredients:
-10 ea Scallops, U-10 dry, cut in half
-As Needed Olive Oil
-TT Salt
-12oz Apple Butter Puree
-8oz Tarragon Mayo
-4oz Candied Walnuts
-8oz Celery Apple Salad
材料:
-10個(gè) U-10 Dry扇貝,對(duì)半切開
-適量 橄欖油
-適量 鹽
-12盎司 黃油蘋果泥(做法見下文)
-8盎司 龍蒿蛋黃醬 (做法見下文)
-4盎司 焦糖胡桃 (做法見下文)
-8盎司 芹菜蘋果沙拉(做法見下文)
In large sauté pan, heat oil over medium high heat. Season scallops with salt and place in pan. Cook until blonde on first side, approx. 2-3 minutes. Flip the scallops and cook for additional 30 seconds on other side. Remove from pan and place on plate or sheet tray lined with paper towel to absorb any excess oil.
步驟:
1、一個(gè)大煎鍋,用中高火把油燒熱;
2、用鹽給扇貝調(diào)味,下鍋煎;
3、煎至底面金黃,約2-3分鐘;
4、翻面,另一面煎30秒;
5、出鍋,放在墊了廚房紙的盤子上吸收多余的油分。
注:
1、U-10 Dry扇貝指的是在干燥容器里儲(chǔ)存且每磅有10個(gè)的扇貝;
2、下鍋前的最后一刻才上鹽,否則扇貝會(huì)出水,發(fā)生類似腌制的過(guò)程;
3、視頻里每面煎1分鐘左右。

APPLE PUREE(蘋果泥)
-8 Apples, finely sliced on mandolin
-3cup Apple Juice
-?cup Sugar
-?cup Cider Vinegar
-1tsp Salt
材料:
-8個(gè) 蘋果,用切片機(jī)切薄片
-3杯 蘋果汁
-1/2杯 糖
-1/2杯 蘋果醋
-1茶匙 鹽
Add all ingredients to a pan with a lid. Simmer until apples are very soft, about 20 mins. Remove lid and rescue liquid. Blend until smooth.
步驟:
1、把所有材料加入鍋中,加蓋,小火煮至蘋果變軟,約20分鐘;
2、揭蓋,濾掉水分;
3、打成泥。

TARRAGON MAYO(龍蒿蛋黃醬)
-? cup Tarragon, finely chopped
-1T Cider Vinegar
-8oz Mayonnaise
-TT Salt and Pepper
材料:
-1/2杯 龍蒿,細(xì)細(xì)切碎
-1湯匙 蘋果醋
-8盎司 蛋黃醬
-適量 鹽和黑胡椒
Combine all ingredients. Season to taste.
步驟:
混合所有材料,根據(jù)需要調(diào)味。

CANDIED WALNUTS(焦糖胡桃)
? cup Sugar
1 ? cup Walnuts
1cup Water
1 tsp Salt
1ea Cinnamon Stick
材料:
-1/2杯 糖
-1.5杯 胡桃
-1杯 水
-1茶匙 鹽
-1段 肉桂
Bring all ingredients to a boil in saucepan. Allow for a syrup to form. Strain the walnuts from the liquid and bake at 325 for 10 minutes on a wire rack.
步驟:
1、把所有材料放入鍋中,燒沸;
2、收汁至糖漿狀態(tài);
3、濾掉液體,把胡桃在烤箱里用325華氏度烤10分鐘。
