CRISPY SKIN SALMON(脆皮三文魚)
Ingredients:
-4 6oz pieces Salmon
-2ea Confit Fennel
-20ea 16-20 Count Shrimp
-4oz Vegetable Stock
-8ea Fennel Sprigs (Garnish)
材料:
-4塊 6盎司三文魚
-2塊 油封茴香
-20個(gè) 16-20 count 蝦(就是每磅有16-20只的蝦子)
-4盎司 蔬菜高湯
-8束 茴香枝,裝飾用

FENNEL PUREE(茴香泥)
-2ea fennel sliced on mandolin
-1/4 T fennel seeds
-1ea lemon juiced and zest peeled
-2oz butter + 2oz extra butter
-1tsp salt
Sauté fennel, fennel seed, 2oz butter and salt in a pan with a lid on. Add lemon juice and peel to the pan. Continue to cook/stir till the fennel is soft with the lid on. Once soft take off heat with the lid still on, blend with the extra 2oz butter. Finish by passing through fine mesh strainer
材料:
-2塊 茴香,用切片機(jī)來切
-1/4湯匙 茴香籽
-1個(gè) 檸檬,皮削下來,汁擠出來
-2盎司 黃油
-2盎司 額外黃油
-1茶匙 鹽
步驟:
1、鍋里加入茴香、茴香籽、2盎司黃油、鹽,加蓋來炒(估計(jì)是說蓋上蓋子后晃動(dòng)鍋?zhàn)樱?/p>
2、加入檸檬汁和檸檬皮;
3、加蓋,煮至茴香變軟,期間不斷攪拌;
4、變軟后,保持加蓋狀態(tài),離火,把茴香放入攪拌機(jī),額外加入2盎司黃油,打成泥;
5、將茴香泥過一下濾網(wǎng)。

BRAVA SAUCE(布拉瓦醬)
-4ea Shallots Finely Sliced
-2ea Cloves Garlic Sliced
-2T Paprika
-16oz Chopped Tomatoes
-8oz Mayo
-1oz Siracha
Sauté the shallot and garlic in a pan with a lid on. Add the paprika and let it cook out. Add the tomato and reduce. Blend and chill. Pass through chinois. Combine siracha and mayo and add to sauce.
材料:
-4塊 紅蔥頭,切碎
-2瓣 大蒜,切碎
-2湯匙 紅椒粉
-16盎司 番茄,切丁
-8盎司 蛋黃醬
-1盎司 Siracha辣椒醬
步驟:
1、加蓋狀態(tài)下炒紅蔥頭和大蒜;
2、加入紅椒粉,煮透;
3、加入番茄,收汁;
4、打成醬,冷卻;
5、過漏勺濾一下醬汁;
6、加入辣椒醬和蛋黃醬,混合均勻。

CONFIT FENNEL(油封茴香)
-2ea Heads fennel cut into 8, outer shell removed
- ? pound Butter, unsalted
-8oz water
-2ea Lemons, juiced and zested
-1tsp Salt
Add everything to a pan in one level. Cook on medium to high heat with a lid on until the fennel is soft. Remove lid and reduce liquor till glazing consistency.
材料:
-2塊 茴香頭,切成8塊,去掉外皮
-1/2磅 無鹽黃油
-8盎司 水
-2個(gè) 檸檬的汁和屑
-1茶匙 鹽
步驟:
1、把所有東西放進(jìn)鍋里,攤平;
2、用中高火,加蓋煮至茴香變軟;
3、揭蓋,收汁至有光澤的狀態(tài)。
